<p><span class="drop_cap">W</span>hen <a title="Beauty and Bedlam" href="http://beautyandbedlam.com/" target="_blank">Jen</a> asked me to be part of a virtual BBQ I thought it sounded like fun, however, the part about contributing an <strong>original</strong> recipe using <a title="Philadelphia Cooking Creme" href="http://www.kraftbrands.com/philly/products/Pages/philadelphia-santa-fe-blend.aspx" target="_blank">Philadelphia Cooking Creme</a> sounded a little scary. In some areas I&#8217;m as creative as the next girl, but in others I&#8217;m a rule follower, or a recipe follower in this case. I don&#8217;t wing it and I don&#8217;t invent my own recipes.</p>
<p><em>Until this Southwest Chicken Salad! </em></p>
<p>I enjoyed the process of creating the recipe in my head and then pulling it together, juggling quantities and proportions until the reality equaled my imagination. At the bottom of this post you&#8217;ll find links to all nine participants in this virtual BBQ: visit them for more summer picnic ideas.</p>

<p>My recipe evolved as it progressed, so the original ingredient picture needs editing. I&#8217;ll explain the changes as I go.</p>

<p>First, drizzle four boneless skinless chicken breasts with olive oil (spreading it on both sides) and bake them at 375 degrees for 25 minutes. While they&#8217;re cooking, prep the other ingredients.</p>

<p>It&#8217;s been a while since I&#8217;ve bought avocados and mine (the green ones in the ingredients picture) <em>weren&#8217;t ripe</em>. If you&#8217;re unsure about selecting avocados, look the chart above (click it for more info) or those perfectly ripe beauties in the picture below. (Yes, I went back to the store for more. They&#8217;re worth it!)</p>

<p>Cut the avocados in half vertically and scoop out the pit with a spoon. The peel of a ripe avocado comes off easily and the inside is slightly mushy, slightly firm. Chop it into chunks and put them in a small mixing bowl.</p>

<p>Slice the kernels off of three ears of fresh, uncooked corn and toss them in a medium bowl.</p>
<p>Usually I make chicken salad with celery and grapes: I love the crunch of the first and the sweetness of the second. Fresh corn provides <em>both</em> the crunch and the sweetness of those ingredients, which I omitted in this southwest version.</p>
<p>It&#8217;s my recipe and I can <del>cry</del> omit if I want to.</p>

<p>Slice and dice the chicken and a red onion and mix with the corn.</p>

<p>Snip fresh cilantro and add to the avocado for extra kick. I used about 2/3 of the little cup that you see in the ingredients photo on top.</p>

<p>Add one container of <a title="Philadelphia Cooking Creme" href="http://www.kraftbrands.com/philly/products/Pages/philadelphia-santa-fe-blend.aspx" target="_blank">Philadelphia Cooking Creme Santa Fe Blend</a> and half a cup of sour cream to the avocados and cilantro and gently stir. Don&#8217;t mash those lovely chunks of avocado!</p>
<p>Pour it over the chicken/corn/onion mixture and stir until coated. Spoon a generous portion over lettuce on a croissant, or however you like to eat your chicken salad.</p>

<p>Yep, sometimes I perform the Photoshop equivalent of dusting and vacuuming my home for blog photos. Unfortunately, <em>Photoshop won&#8217;t clean my house in real life</em>.</p>

My favorite part is when <em>they drop the vacuum cleaner down a flight of stairs</em>. They&#8217;d be crazy to include that if it wasn&#8217;t tough, right?</p>
<p>At first I was surprised by how <em>simple</em> the Magnesium is: no pull-out hose and no attachments. I thought I would really miss those things until I remembered that the hose on my old vacuum cleaner hasn&#8217;t worked for months and the attachments are all broken or lost.</p>
<p>I like having the <strong><a title="Oreck Ultimate Handheld Vac" href="http://www.oreck.com/myhomesweethome" target="_blank">Ultimate Handheld Vac</a></strong> as a separate unit. When we&#8217;re in frantic, somebody&#8217;s-coming-over power-cleaning mode—which is how most of ours occurs—one person can vacuum while another uses the handheld vac to clean stairs or baseboards or blinds or those AC intake vents that always look dirty.</p>
<p>My eight-year-old daughter is responsible for cleaning the stairs going up to her room, but she&#8217;s never been able to vacuum them. Now she does it easily using the handheld vac with its shoulder strap.</p>

<p>There&#8217;s a lot to love about the <strong>Oreck Magnesium</strong>:</p>

<li>It&#8217;s lightweight—only about 7 1/2 pounds.</li>
<li>The cord is long enough to stretch across the whole room.</li>
<li>It feels self-propelled.</li>
<li>It has a high setting for carpet and a low setting for hardwood or tile.</li>
<li>It can lay almost flat to slide under furniture.</li>
<li>I was able to assemble it <em>by myself!</em></li>
</ul>
<p>The Magnesium has a hefty pricetag—$500—but feels built to last. We&#8217;ve used a bagless vacuum cleaner for the past few years and I felt smart saving that extra expense, although it seemed like a decent amount of dust escaped again when I emptied the canister. I was afraid that the Magnesium bags would fill up instantaneously, but we&#8217;re still on the originals. I need to find out where to get replacement bags.</p>

<p>This week I made <a title="pork and mushroom quesadillas" href="http://www.porkbeinspired.com/RecipeDetail/958/Pork_And_Mushroom_Quesadillas.aspx" target="_blank">Pork And Mushroom Quesadillas</a> using this week&#8217;s selection: pork sirloin cutlets. I enjoy sit-down family dinners, but I also love it when everyone gathers in the kitchen and hangs out while I&#8217;m cooking, and then I scoop food right out of the skillet or off the cutting board onto an outstretched plate. This was that kind of a meal.</p>
<blockquote>
<h3>Pork And Mushroom Quesadillas</h3>
<p><time itemprop="prepTime" datetime="PT30M">Prep Time: 15 minutes</time><br />
Cook Time: 10 minutes</p>
<ul>
<li>12 ounces pork cutlets, pounded 1/4-inch thick</li>
<li>1/4 cup olive oil with garlic, OR olive oil, divided</li>
<li>salt , to taste</li>
<li>6 ounces fresh mushrooms, sliced</li>
<li>1/3 cup green onions, sliced</li>
<li>8 ounces Swiss cheese, OR Gruyere cheese, shredded (2 cups)</li>
<li>4 large flour tortillas, (9-to 10-inch)</li>
</ul>
<p>Stack cutlets and cut crosswise in half, then cut each stack lengthwise into matchstick-size pieces. Heat 1 tablespoon oil in 12-inch nonstick skillet over high heat; stir-fry pork for 2 minutes or until no longer pink. Remove pork from skillet with slotted spoon. Season to taste with salt.</p>
<p>Add 1 tablespoon oil to skillet. Add mushrooms and onions to skillet; stir-fry for 1-2 minutes or until crisp-tender. Remove from skillet. Wipe skillet with paper towels.</p>
<p>To assemble, sprinkle 1/4 cup cheese over half of each tortilla. Top each with pork and mushroom mixture. Sprinkle each with 1/4 cup of remaining cheese. Fold tortillas in half; pressing gently.</p>
<p>Add 1 tablespoon oil to skillet. Cook quesadillas, 2 at a time, over medium heat for 2-4 minutes or until golden and cheese is melted, turning once. Remove quesadillas from skillet; loosely cover with foil to keep warm. Repeat with remaining 1 tablespoon oil and quesadillas. Cut quesadillas into wedges to serve.</p>

<p>Make sure to have plenty of sour cream on hand. We love it! When my 8-year-old daughter was little, we&#8217;d catch her eating it straight out of the carton.</p>
<p>Have you ever attempted to shred Swiss cheese? It&#8217;s a challenge, but oh, so good hot and melted.</p>

I&#8217;m thankful to live in a good state for homeschoolers, but it&#8217;s just plain easy to forget about those forms. If you do, however, you can expect a letter or call from your county, and if you have a high schooler, it can affect their ability to get a driver&#8217;s permit or license.</p>
<p>This summer I learned about a service called <a title="Homeschool Compliance" href="https://www.homeschoolcompliance.com/" target="_blank">Homeschool Compliance</a>, which is accepted in 110 Georgia counties. Set up an account and log into the secure site; enter your family information, dates for your current school year, etc.; create an electronic signature (quite entertaining); and submit your monthly attendance online. No stamps, printer ink, paper, or envelopes!</p>
<p>Your family info—<em>those details that we fill in over and over again each month</em>—are pre-populated and all Monday-Friday dates are pre-checked. The system automatically calculates the total days of attendance for the month and the cumulative days for the year, time-saving features that make filling out your form a breeze.</p>
<p><strong>It literally takes seconds to submit your monthly attendance.</strong></p>
<p>You&#8217;ll receive monthly reminders to submit and an email receipt when the report has been received by your local school system. You can have PDF copies of the reports emailed to you for your records, and they are always available on the website, too. Our theme is &#8220;On Vacation&#8221; and our mission is to cook our way to victory by submitting the tastiest or most interesting recipes in the competition.</p>
<p>My partners—Piera at <a title="Jolly Mom" href="http://www.jollymom.com/" target="_blank">Jolly Mom</a> (our hostess), Lisa at <a title="Life with Lisa" href="http://www.lifewithlisa.com/" target="_blank">Life with Lisa</a>, Meghan at <a title="JaMonkey" href="http://www.jamonkey.com/" target="_blank">JaMonkey</a>, Renee at <a title="Cutie Booty Cakes" href="http://cutiebootycakes.blogspot.com/" target="_blank">Cutie Booty Cakes</a>, and Diane at <a title="Turning the Clock Back" href="http://turning-the-clock-back.blogspot.com/" target="_blank">Turning the Clock Back</a>—and I are competing against teams of bloggers in ten other cities.</p>

<p>We had so much fun cooking, talking, and laughing. I love spending time with other bloggers and getting to know them. Atlanta is a great place to blog because there are so many neat ladies doing it!</p>

<p>Here are our recipes, which make up a meal: Balsamic Herb Tomato Salad (salad), Garlic Knots (bread), and White Chicken Pizza (main course). We would totally make pizza as a family on vacation—what a great way to involve the whole family in the kitchen!</p>

<h3>White Chicken Pizza</h3>

<p><strong>Ingredients:</strong><br />
2 chicken breasts<br />
Lawry&#8217;s Seasoned Salt Marinade<br />
5 cloves of garlic, finely minced<br />
3 Tbsp of olive oil<br />
1 large bunch fresh spinach<br />
1/2 small red onion, sliced thinly<br />
2 cups shredded mozzarella cheese<br />
1 recipe <a title="pizza dough" href="http://www.jollymom.com/2010/05/homemade-whole-wheat-pizza-dough-recipe.html" target="_blank">homemade pizza dough</a></p>
<p><strong>Directions:</strong><br />
Marinade chicken in Lawry&#8217;s Seasoned Salt Marinade (overnight is best, but a few fours will work).<br />
Cook chicken on grill pan until done and then shred.<br />
Roll out pizza dough very thin and brush the top with olive oil and add minced garlic. Add fresh spinach, mozzarella cheese, red onion, and chicken. Don&#8217;t overload your pizza with toppings&#8211;it&#8217;s best to keep it light.<br />
Cook your pizza on a <a title="pizza stone or tiles" href="http://www.jollymom.com/2010/09/make-pizzas-like-pros-how-to-make.html" target="_blank">pizza stone or quarry tiles</a> in an oven that&#8217;s been preheated to 500 degrees for 10-15 minutes or until the cheese is bubbly and golden brown around the edges.</p>
<p>Recipe makes 2-3 pizzas, depending on how thin you roll out your pizza.</p>
<h3>Balsamic Herb Tomato Salad</h3>

<p><strong>Ingredients:</strong><br />
2 pounds tomatoes, cut into wedges<br />
1 bunch scallions, thinly sliced<br />
1/3 cup Lawry&#8217;s Balsamic Herb Marinade<br />
Parmigiano Reggiano</p>
<p><strong>Directions:</strong><br />
Combine the tomatoes, scallions and marinade in a large salad bowl and toss to coat. Top with freshly grated Parmigiano Reggiano.</p>
<h3>Garlic Knots</h3>

<p><strong>Ingredients:</strong></p>
<p><strong>Dough</strong><br />
1 3/4 cup warm water<br />
1/4 cup olive oil<br />
1 tsp sea salt<br />
1 Tbsp sugar<br />
1 1/2 Tbsp active dry yeast<br />
5 1/2 cups all-pupose, unbleached flour</p>
<p><strong>Garlic Coating</strong><br />
1/4 cup olive oil<br />
4 Tbsp unsalted butter<br />
6 cloves garlic, finely crushed<br />
1/4 cup finely chopped fresh Italian parsley<br />
Parmigiano Reggiano<br />
Lawry&#8217;s Seasoned Salt to taste</p>
<p><strong>Directions:</strong><br />
Combine water, olive oil, sea salt, sugar, and active dry yeast in a large bowl. Mix to dissolve yeast.<br />
Add flour and mix until well combined. Cover the bowl with plastic wrap or a lint free towel and set in a warm spot to proof until doubled in size. At this point, you can refrigerate the dough for a few days if you want to make it ahead of time or go ahead and begin making the knots.<br />
Divide the dough in two balls to make it easier to handle. Roll the dough into a rectangle about 5&#8243;x16&#8243; and 1/2 inch thick. Using a pizza cutter or sharp knife, cut the rectangle into 1/2? x 5? strips.<br />
With floured hands, roll each strip back and forth to create a rope. Tie into a knot&#8211;over, under, and through&#8211; and place on sheet pan lined with a silpat or parchment paper.<br />
Make the rest of the knots, cover pans loosely with a towel or plastic wrap and place in a warm spot to rise before baking. You want the knots to double in size (approx.)<br />
Preheat oven to 500° F. Bake for 8-10 minutes or until lightly golden.<br />
While knots are baking, make garlic coating. Gently warm olive oil, butter, and garlic in a small saucepan. Add chopped parsley and set aside.<br />
Remove knots from oven, place in a large bowl and toss with garlic coating OR brush the coating on. Season with Lawry&#8217;s Seasoned Salt to taste and freshly grated Parmigiano Reggiano.</p>
